I ought to be a bit more hardworking when it comes to updating the blog and my journey with Roaccutane.




Compared to Day 166, I'm so glad to say that there are improvements to my skin! The scars seem lighter now. No active pimples.

Okay, I haven't been taking Roaccutane very regularly for the past month. It started when I fell sick and I stopped taking Roaccutane for the two weeks while I was trying to recover from fever, cough, sore throat and runny nose. I restarted with a pill every two days. Will be changing to once everyday next week.

This is only my.. 5th box? I'm a bit slow because you're suppose to take one box per month. I'm already into the 6th month and I've just started on the 5th box. According to Dr Chiam, I'm suppose to take at least 13-15 boxes. I hope I don't have to complete all 15 because it's really burning a hole in my pocket.

Recipe: Seaweed Crackers!


Pretty much my last batch of CNY snacks! Craving for some seaweed crackers after finishing the container that Evan brought for the office. Decided to make my own and here's my Valentine's Day adventure!

Seaweed Crackers 

Ingredients:
- 1 packet of roasted seaweed (those you use for sushi. There's 10 pcs in a packet)
- popiah skin
- 2 eggs
- 1/2 teaspoon of salt
- oil spray
Add 1/2 teaspoon of salt with 2 eggs and beat them.
 Take a sheet of popiah skin, and brush the egg mixture on it. The egg mixture acts as a glue here.
 Put a sheet of seaweed on top, and brush another layer of egg mixture.
Place another layer of popiah skin on top and press it down to ensure that they stick together. If they do not stick together, use more egg mixture. Spray oil onto both sides of the popiah skin. This is to make sure that they will not stick together when air-frying them later on.
 Cut them into square/rectangular pieces!
Airfry them at 180 degrees, 15 minutes, to a nice golden brown colour. I did a packet of seaweed. That means I used up 10 sheets of seaweed, and 20 sheets of popiah skin. This amount is too much for the rotary cage so I separated them into 3 batches.
 Tada! Leave them to cool before keeping them into containers.
10 sheets of seaweed can make this amount of seaweed crackers!

Looks pretty easy but it can get pretty tedious!

Method:

1. Mix half a teaspoon of salt into 2 eggs and beat them.
2. Place a layer of popiah skin and brush the egg mixture on it.
3. Place a sheet of seaweed on top of the popiah skin and brush another layer of egg mixture.
4. Add another layer of popiah skin on top of the seaweed. Ensure that they stick together. If not, brush more egg mixture.
5. Spray some oil on both sides of the popiah skin.
6. Cut them into smaller pieces.
7. Using the rotisserie function, air-fry them at 180 degrees Celsius for 15 minutes, or when they turn to a nice golden brown colour.
8. Allow seaweed crackers to cool before keeping into containers.

Recipe: Spam fries!

I've been singing praises for the air-fryer so much so that I sound like a broken record. But still, air-fryer is  :D A was craving for some spam fries and it's so expensive outside! What better way to get some cheap spam fries than to make your own? (:

Ingredients:
A can of luncheon meat

We got a can of luncheon meat, and cut them into strips. This is NOT the correct thickness. It was too thick to be thoroughly fried. We ended up with some fries and some normal luncheon meat.

Place them onto a tray and into the air-fryer they go! Temperature is set at 195 degrees for 8 minutes. Flip them over and airfry for another 5-8 minutes. The amount of luncheon meat in the photo above is about half a can.

Tada! You're done! As you can see, some of them looked like fries, while some others look like your normal pan-fry luncheon meat. The key to this, is to make sure that the luncheon strips are not too thick!

We were too hungry to put any seasoning/sauce etc. But if you like, you can add in pepper, or drizzle some lemon/lime. I heard it tastes good. 

Method:

1. Cut the luncheon meat into thin strips.
2. Airfry at 195 degrees Celcius for 8 minutes.
3. Flip them over and airfry for another 5-8 minutes.

Recipe: Fried Crabsticks!

We have been using the air-fryer actively due to my mom trying out new recipes for CNY snacks so here's another easy peasy one!

This is a fuss-free recipe because all you need is crabsticks, and a bit of oil.

Fried Crabsticks

Ingredients:

oil (I used oil spray)

 This is one packet of Dodo crabsticks. Some say that the different brands (of crabsticks) will result in different taste and Dodo offers the best taste so yeah. Your preference.

 Tear them into strips. Thick or thin, it's your preference. Dry the strips with kitchen towel. Spray oil and mix it up a little. The purpose of spraying oil is to prevent the strips from sticking to each other or the cage.

Throw it into the air-fryer. I'm using the Europace air-fryer which has the rotisserie function. I really like this one compared to the Philips air-fryer though. It's way bigger than the Philips one and they provide a lot of tools like the pans, rotary cage etc. 1 packet of crabsticks is a good amount of for the cage. 2 packets should fill the cage to the brim.

Temperature is set at 180 degree Celcius and let it rotate for 50 minutes. Yes 50 minutes. I know a lot of people got theirs done in 10 minutes or less but I guess because this is rotating non-stop, it needs more time to cook. Also, for this version, I forgot to dry the strips before throwing them into the air-fryer.

It is done when it is crispy, and fried to a nice golden brown color. Wait for it to cool before keeping them in an air-tight container.

A packet of Dodo crabsticks can fill a small container.

So here's another not-so-nice attempt..

 For my second time, I decided to experiment with the time and temperature. I tried 195 degrees Celcius and set it to 30 minutes instead. It was not crispy and some strips were still white so I gave it an additional 15 minutes. It came out looking really brown :( Taste wise, it's slightly burnt but the crab stick taste is still there.

I know this can be pretty expensive outside. With a bit of effort and time, you can save yourself $8 - $10 for a very easy-to-make snack!

Method:

1. Defrost the crabsticks.
2. Tear them into strips. Your preference as to whether it is thick or thin.
3. Spray oil onto the strips and mix them up a little.
4. Using the rotissarie function, fry them at 180 degree Celcius for 50 minutes.
5.Wait for the fried crabsticks to cool before keeping them into an air-tight container.
